Enter servings. This calculator allows 150 grams of minced meat and 20 grams of breadcrumbs per serving, then scales both quantities for your batch, crowd, or party.
This meatball batch calculator works from servings, and the usual rule is 4 to 6 meatballs per person for a main dish, or 2 to 4 meatballs per person for an appetizer. Meatball size changes the count: small 1 inch meatballs need 6 to 8 per person as a main, medium 1.5 inch meatballs need 4 to 6, and large 2 inch meatballs need 3 to 4. For a crowd, add a 10 to 15 percent buffer for seconds and late guests.
This calculator allows 150 grams of minced meat and 20 grams of breadcrumbs for each serving. For 10 servings, that is 1,500 grams of minced meat and 200 grams of breadcrumbs, enough for a generous main dish batch. Mix gently and do not overwork the meat, or the meatballs turn tough. Add one egg per pound of meat as a binder, plus salt, garlic and herbs for flavour.
One pound of ground beef gives about 16 one ounce meatballs, about 21 cocktail meatballs, or about 8 two ounce meatballs. A pound of rolled mix, including breadcrumbs and egg, gives a few more pieces than a pound of pure meat. To convert a recipe, divide 16 by the weight of one meatball in ounces to get pieces per pound. For 50 people as a main dish at 6 meatballs each, you need 300 meatballs, which is about 19 pounds of rolled mix.
Allow about three quarters of a cup of marinara per dozen meatballs for a light coat, or 1 cup per dozen for a creamy or Swedish sauce that soaks in. For a batch of 10 servings at 5 meatballs each, that is 50 meatballs, needing about 3 cups of marinara. These meatball recipe amounts scale by servings, so a double batch needs double the sauce. Simmer cooked meatballs in sauce for 10 to 15 minutes so they absorb flavour. Keep extra sauce warm on the side for guests who want more, especially for buffet service.
Frozen meatballs are already cooked, so they shrink less on the day and are easier to plan. Allow about 5 ounces of frozen meatballs per adult as a buffet main, 3 ounces as a headline appetizer, or 1.5 ounces as one nibble among several. Check the piece size on the bag, because bite size pieces at half an ounce give twice as many meatballs per pound as dinner size pieces at one ounce. A 6 quart slow cooker holds about two standard bags with sauce.
Bake meatballs on parchment lined trays at 375 to 400 degrees Fahrenheit for 20 to 25 minutes, until browned and cooked through to 165 degrees Fahrenheit inside. For a crowd, mix the meat in separate batches rather than one giant bowl, so seasoning spreads evenly. Hold cooked meatballs in sauce in a slow cooker or chafing dish, and stir gently so they do not break. Refrigerate leftovers within 2 hours, and freeze extra meatballs in sauce for up to 3 months.
Plan 4 to 6 meatballs per person for a main dish, or 2 to 4 per person for an appetizer. Small meatballs need more pieces, large meatballs need fewer.

Yes, freeze cooked meatballs in sauce for up to 3 months, or freeze raw rolled meatballs on trays before bagging. Thaw in the fridge and reheat in sauce.
Do not overmix the meat, include breadcrumbs and egg as binders, and finish cooking in sauce. Bake just until cooked through, then hold in warm sauce rather than dry heat.
